Christmas in July is calling my name …

I love celebrating Christmas in July … I happened across a post about how we celebrated the occasion last year in the Household and was swept away on a wave of nostalgia. We had a Christmas tree twinkling in the living room and lots of holly scattered around the house (ouch!). Even the bathroom had a Santa toilet seat cover.

On the menu last year were turkey sausages – whole turkeys were just a little too pricey and fussy to prepare. Husband barbecued the snags while I served up roast potatoes, steamed veggies, silverbeet gratin and my sister’s famous cous cous salad.

But my piece de resistance were the reindeer cupcakes, inspired by my clever school mum friend Mel. Check out the recipe below.

And now I’m wondering if I can possibly squeeze in a Christmas in July celebration this year. Husband and the kids are away next week pootling around the countryside visiting his relatives. Then he’s out of action the week after having a little op. And I’m pretty sure there’s a day on a friend’s boat scheduled for the weekend after. Which pretty much brings us to the end of the month. So I might just have to console myself with another batch of Rudolph cupcakes to take as a gift to our boaty hosts.

Ah well, maybe next year. In fact, I might make next July a whole Christmas in July festival. Leave the tree up all month, hold rolling drinks and turkey dinners … I’m getting all glassy and excited at the mere thought …

RECIPE: RUDOLPH CUPCAKES

  • 125g butter, melted
  • 3/4 cup caster sugar
  • 1 teaspoon of vanilla
  • 2 eggs
  • 1 & 1/2 cups self-raising flour
  • 1/2 cup milk
  • 12 red patty cases
  • White icing
  • Chocolate tiny teddies
  • Mini M&Ms
  • Smarties

METHOD: Beat butter and sugar with electric mixer until creamy. Add eggs one at time, beating after each. Add flour and milk, beat again. Place red patty cases in a 12-hole cupcake tray and pour in mixture. Bake for 15 minutes or until golden. Cool. Ice with white icing. Decorate with two Tiny Teddies for antlers, two brown Mini M&Ms for eyes and a red Smartie for a nose.
