Christmas lists and chunky soup

Sprog 1 is her mother’s daughter – she has compiled her Christmas list already. (Well, she’s running a few months behind me, but I’m still very proud.) I’ve also inveigled my mother into my madness. She accompanied me to Toys R Us this morning to purchase my Christmas present: a bike. No, I didn’t get a tricycle, Toys R Us actually sells adult bikes. Presumably for the unnaturally tall children Western society is producing these days. It’s black and pink and very snazzy. But it has to stay packed up in its box until Christmas Day. Boo.

We’ve waved Mum and Dad off, so I’m about to start prepping a pot of soup for dinner. I’m going for the Smokey White Bean Soup I blogged for Village Voices on Wednesday.

Recipe: Smoky White Bean Soup

  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 1 carrot, finely chopped
  • 2 sticks celery, finely chopped
  • 2 cloves garlic, finely chopped
  • 2 smoked chicken drumsticks
  • 400g can crushed tomatoes
  • 2  x 400g cans of cannellini beans
  • 1.5 litres chicken stock
  • 200g short pasta
  • Grated parmesan

Heat olive oil in a large pot. Saute onion, carrot, celery and garlic until softened. Add tomatoes, stock, 1 can of cannellini beans and chicken drumsticks. Simmer over a low heat for 30-40 minutes.

Remove chicken drumsticks and puree liquid mixture with a stick blender.

Add pasta and second can of beans. Simmer until pasta is cooked.

Shred the smoked chicken meat into the dish if desired and ladle mixture into bowls. Serve with freshly grated parmesan. Also great with a cob of fresh bread and butter.
