Recipe: pear crumble

Farmers Direct sent me 10 pears last week and I was determined to turn them into something before they, well, turned (like the lettuce and grapes did). So I made two pear crumbles. One for dessert last night with friends, one for dessert tonight with family. Ironically, the pears weren’t quite ripe, so they were a teeny bit crunchy in the crumble, but the flavour was still lovely. The recipe was so easy-peasy to make. None of that rubbing together of flour and butter to make the crumbly top, I just tossed everything in the food processor.

RECIPE: PEAR CRUMBLE

5 pears
2 teaspoons of lemon juice
½ teaspoon vanilla extract
1½ teaspoon cornflour
1½ tablespoons brown sugar
Topping
1/3 cup flour
1/3 cup rolled oats
2 tablespoons brown sugar
5 ginger biscuits
Pinch of cinnamon
3 tablespoons butter, melted
(NB Double the above if you want to make two crumbles)
METHOD
Heat oven to 190°C (170°C fan-forced). Peel pears, cut in half, remove cores and roughly chop into approx 1½ cm pieces. Combine lemon juice, vanilla extract, cornflour and sugar with pears in bowl while you make the topping. Combine all dry ingredients in food processor and pulse until combined and oats are chopped finely. Add melted butter and pulse once more. Pour pears into a baking dish. Top with mixture and bake in oven for approx 20 minutes, until crispy. Serve with ice-cream.
