This salad was inspired by a gorgeous dinner at a friend’s house a few weeks ago. She served up the most delicious leafy treat and I couldn’t wait to recreate it. Hers featured asparagus, I went with walnuts and avocado instead.
Just one problem – the Sprogs were horrified by a bowl of smoked fish, smelly cheese and green stuff. So I made them cheese toasties and Husband and I scoffed the salad.

Recipe: Smoked salmon and goat’s cheese salad
Mixed greens
2 x 150g smoked salmon fillets, flaked
150g goat’s cheese, crumbled
1/2 cup of walnuts, crumbled
1 large avocado, diced
Dressing
1/4 cup of olive oil (I used chilli-infused oil for zing)
1/4 cup lemon juice
1 tsp honey
salt & pepper to taste
METHOD: Assemble salad ingredients in bowl. Mix dressing ingredients together and pour over. Voila! Serves 3-4.
