Ginger beer “sorry” muffins

We had dinner at a neighbour’s house last night. Sprog 1 stayed for a sleepover. I’m going to pick her up now. I’ve baked ginger beer muffins to take as a peace offering, because I shamed myself at dinner. I still can’t bear to talk about it. Maybe tomorrow.

In the meantime, these muffins are delish. I hope the neighbours like them … and me …

Recipe: Ginger beer muffins

2 cups self-raising flour

1 tsp ground ginger

1/2 cup brown sugar

1 egg, beaten

100g butter, melted

1/2 cup golden syrup

2/3 cup of ginger beer

METHOD: Preheat oven to 180C. Mix flour and ginger in a bowl. Mix brown sugar, egg, melted butter and golden syrup in a bowl. Add wet ingredients to dry ingredients and stir to combine.  Add ginger beer. Stir gently. Spoon into muffin cases and bake until golden, around 20 minutes. Makes 12.
