Remember the Spice & Co Aussie BBQ mix I used on the beef fillet last week? I had a bit left, so I rubbed some salmon fillets with it. I reckon it worked even better on them. I’ve also been feeling a bit guilty about my addiction to Meredith marinated goat’s cheese. It’s expensive and all that oil just gets chucked away. So I decided to used the oil make some sweet potato mash to accompany the salmon. The sweet spices in the BBQ mix were are a great match for the goat cheesy sweet potato.
Spice-rubbed salmon with sweet potato mash
Ingredients: 2 tablespoons Spice & Co Aussie BBQ spice mix; fresh salmon fillets; rice bran oil; 1 sweet potato; 2 tablespoons of oil from a jar of Meredith goat’s cheese (or any marinated cheese); vegies to serve.
Method: Rub the spice mix over the salmon. Heat rice bran oil in frying pan. Pan fry salmon fillets on each side to taste. Boil sweet potato until soft; mash with Meredith goat’s cheese. Serve with green veg.
I just saw rice bran oil in our local store. Do you have a special reason for using it here?
I read somewhere that it’s a healthier alternative. So no particular reason, olive oil or canola or something would do just as well.
