I went to a fascinating event last night, the launch of the limited edition Coravin Timeless in Ocean Blue at Bondi Icebergs.
I was initially reluctant to go, which probably seems crazy when there were ocean views and wine involved. But I knew it would take two buses and almost 90 minutes to get there.
Oh, and, I’m old and tired.
But, in the end, I decided I couldn’t pass up a night at Icebergs so I girded my loins and started work at 8am so I could leave early enough to get to Bondi by 6pm.
What is Coravin? It’s a wine system that allows the pouring of wines by the glass without opening them, so they’re not affected by external conditions. You can sample the wine and the remainder of the bottle stays pristine indefinitely.
They even have a device for Champagne!

It’s very popular in restaurants for serving wines by the glass and is gaining traction among at-home wine lovers who want to open a special wine and not feel pressured to drink the whole bottle so they can savour it while it’s still in its prime.
Apparently per capita Australia is Coravin’s biggest market. Go us!
For the launch of its Ocean Blue coloured device Coravin partnered with Subsea Estate – Australia’s first open-ocean winery – to put the system to the test in a very unique way.
Subsea Estate’s signature drops were first poured using Coravin a month prior to the event and then sunk 18 metres to the South West Western Australia ocean floor.
They were retrieved this week and I got to taste them paired with an array of coastal food.

It’s hard being me.

It was a fascinating night. I loved hearing from the couple who own Subsea who moved from working in the seafood business and diving for abalone, to producing ocean matured wines. They were so passionate and excited by their product:
I tried their semillon and Shiraz, which were both excellent.
I also met up with a few blasts from my magazine past, including a former SHE mag journo and an art director mate, which was fun.
Great night. Thoroughly enjoyed it. Could do without another event tonight, but that the world’s first canned sangria isn’t going to sample itself.
OK, time to get up and face the rainy day.
