It’s Sprog 1’s class Christmas party today and she needed to take a plate. I had loads of pink marshmallows left over from her birthday – I only used the white ones to make her candy sushi – so we sat down together last night and decorated mini cupcakes as little pigs. They’re smaller versions of the Piggy Cupcakes I created a few months ago. I figured a fraction less sugar was probably a good thing at this time of year – candy canes seem to be dangling from the Sprogs’ mouths every school pick-up, handed out by classmates with their Christmas cards in the playground.
Recipe: Three Little Pigs Cupcakes
(makes 36 mini cupcakes)
125g butter, room temp
3/4 cup sugar
1 tsp vanilla essence
2 eggs
1/2 cup milk
1 & 1/2 cups self-raising flour
pink icing
108 pink mini marshmallows
72 mini choc bits
METHOD: Preheat oven to 180C. Cream the butter, sugar and vanilla essence with electric beaters. Add eggs, beat well. Add milk and self-raising flour. Mix with wooden spoon to combine then beat for 30 seconds with electric beaters. Spoon into patty cases in a 12-cupcake tray. Bake for around 12-15 minutes, until golden. Cool on wire racks. Ice cupcakes with pink icing. Set aside 36 marshmallows, use a skewer to make two holes in each one as nostrils. Squeeze one end of each of the other marshmallows together to form an ear shape. Place a snout, two mini choc bits for eyes and two ears on each cupcake.
