I found this recipe on Domestic Diva MD’s website. She’s a medical student who bakes. Cool, huh? I had some frozen blackberries in the freezer and thought this would be the perfect way to use them. I didn’t have quite enough so I supplemented them with some frozen strawberries. The mixture turned a glorious purple colour when I stirred it, which gave me a glimmer of understanding as to why some people love baking so much. Here’s the recipe, ever so slightly tweaked by me because I’m a lazy chef:
Ingredients: 3 cups self-raising flour; 1/2 cup sugar; 1 tbsp finely chopped orange zest; 125g cold butter, cubed; 1 cup buttermilk (I added another half cup to this because my mixture seemed a bit dry); punnet of blackberries; skim milk; icing sugar.
Method: Preheat oven to 180 degrees; mix together flour, sugar and orange zest. Rub butter through flour with your fingers until the mixture is all crumbly. Chop the berries, stir into mixture with the buttermilk. Place large spoonfuls on a baking sheet 5cm apart (you’ll get about 12-16) and bake for 15-18 minutes. Remove and let cool. Mix together skim milk and icing sugar to make enough frosting to drizzle 1 tbsp onto each scone.
