DIY stained glass window. Tick. Baking. Tick. Sliced rice cake with XO sauce and shredded pork at New Shanghai. Tick. Not a bad Sunday so far.
1. Wholemeal blueberry & buttermilk muffins
INGREDIENTS: 1 and 1/2 cups wholemeal self-raising flour; 1 cup self-raising flour; 3/4 cup of brown sugar; 1 and 1/2 cups buttermilk; 2 eggs, lightly beaten; 2 tablespoons vegetable oil; 2 cups bluberries (or other berries of choice).
METHOD: Preheat oven to 180C. Line 12-hole muffin pan with paper cases. Mix flour and sugar in a bowl. Pour buttermilk, eggs and oil into another bowl and whisk with a fork until just combined. Pour into dry ingredients and stir until just combined. Add berries and stir. Spoon into muffin tin and bake for 20 minutes or until golden.
2. Wholemeal(ish) Freckle bikkies
INGREDIENTS: 125g butter, chopped, at room temperature; 1 cup brown sugar; 1 egg; 1 tsp vanilla extract; 1/4 cup wholemeal self-raising flour; 1 and 1/4 cups plain flour; 1/2 tsp bicarbonate of soda; 20 Freckles.
METHOD: Preheat oven to 180C. Place baking paper on two oven trays. In a large bowl, using an electric mixer, cream butter and sugar together until light and fluffy. Beat in egg and vanilla extract. Lightly fold flour and bicarbonate of soda into butter mixture with a wooden spoon. Roll tablespoonfuls of mixture into balls. Arrange on prepared trays 4cm apart. Flatten slightly. Top each ball with a Freckle. Bake for 10-12 minutes until golden. Allow to cool on trays for 5 minutes. Transfer to wire rack to cool completely.
