Sprog 2 rejects my homemade efforts for her lunchbox, preferring everything in bright, commercial wrappers, but Sprog 1 loves DIY treats. This recipe is handy for using up all the manky bananas in the fruit bowl at the end of the week. So easy to make and yummy. (And the wholemeal, fruit and “brown” word let me kid myself it’s kind of healthy.)
INGREDIENTS: 2 cups wholemeal self-raising flour, 125g unsalted butter, 3 ripe bananas, 1 tsp vanilla essence, 2 eggs, 1 cup brown sugar.
METHOD: Mixed softened butter, mashed bananas, vanilla essence, beaten eggs and sugar in a bowl. Stir in flour until just combined. Pour into a greased and floured loaf tin and bake at 180C for about 40 mins, or until a skewer comes out clean.

I googled wholemeal selfraising banana bread because i always have left over of everything and try and find new ways to use it up…… and ‘BANG’ found you.
Right at this moment I have used your recipe and is now baking in the oven…(fingers crossed) another 30 mins to go..many thanx for sharing,

Well my oven is a little dodgy however an extra 20 minutes is needed . It was the best one I have ever tasted and i have made many. this recipe is a keeper. =)
