Fun weekend project: Puppy cupcakes

Did you catch my blog on Cute Animal Cupcakes over at Kidspot’s Village Voices? If you’re at a loose end over this drizzly weekend – only a day of school hols to go, you can do it! – try making an edible menagerie with the kids.

Here’s a how-to for one of the designs, Doug The Dog.

Basic cupcake recipe

  • 125g butter, room temp
  • 3/4 cup sugar
  • 1 tsp vanilla essence
  • 2 eggs
  • 1/2 cup milk
  • 1 & 1/2 cups self-raising flour

METHOD: Preheat oven to 160C (180C fan-forced). Cream the butter, sugar and vanilla essence with electric beaters. Add eggs, beat well. Add milk and self-raising flour. Mix with wooden spoon to combine then beat with electric beaters until ingredients are incorporated (don’t overbeat, or cupcakes will be dry and firm). Spoon into patty cases in a 12-cupcake tray. Bake for around 12-15 minutes, until golden. Cool on wire racks. Makes 12.

DOUG THE DOG DECORATING INSTRUCTIONS:

  • White icing
  • Cocoa powder
  • Spearmint leaves
  • Brown mini M&Ms
  • Black Jelly Belly jelly beans
  • Black writing icing
  • White marshmallows
  • Red Smarties
METHOD: Mix cocoa powder with white icing to make a pale brown colour. Cover spearmint leaves with brown icing. Ice cupcakes with white icing. Position ears. Use white marshmallows as noses, with black jelly beans as snouts. Draw mouths with black writing icing. Place red Smarties just under the marshmallows as tongues. Use brown mini M&Ms for eyes.
