Trakkie daks, ugg boots, no bra, mad hair, no make-up … I look fabulous today. But I’m comfortable and warm and I haven’t left the house since 9am. Loving! Husband’s gone to work – and taken the car – so the Sprogs and I have been dividing our time between tellie on the couch and assorted board games at the dining table. I even stole a nap while pretending to watch The Lorax.
Of course, I never truly slow down. So 30 minutes was spent labouring over mandarin curd that wouldn’t thickened. Gave me flashbacks to making aioli. Very traumatic.
And then I whipped up a batch of strawberry muffins for Sprog 1’s lunchbox next week.
And now I’m making a sausage and lentil casserole for dinner.
But in Alanaworld that’s a relaxed Sunday.

Recipe: Strawberry and oatbran muffins
1/4 cup of vegetable oil
1/2 cup of milk
1 egg, beaten
1/4 cup caster sugar
1/4 cup brown sugar
1 & 1/4 cups of self-raising flour
1/2 cup oat bran
1 punnet of strawberries, chopped
METHOD: Preheat oven to 180C. Mix oil, milk and eggs in a bowl. Add sugar and combine. Add flour and oatbran. Gently stir until just combined. Stir in strawberries and spoon into patty cases in a 12-muffin pan. Bake for around 20 minutes or until golden.

Sausage and lentils still needs work. I used a different sort of lentil to usual and it stayed a bit crunchy.
The aioli!!! I remember it well – just the thing I needed to give me a grin for my Monday morning. Very impressive muffins for lunchboxes. Regret being slack on my Sunday and not whipping up anything!
Muffins are a doddle – chuck everything in a bowl, stir, spoon into cases, bake. Anything more fancy is a bit beyond me.
