Best-ever chook sangas

I’ve been a chicken sandwich afficionado since childhood. My nan always had a boiled bird in the fridge and my favourite brekkie at her place was a toasted sanga with chook, butter and mayo. I’ve gone low-carb these days, so I usually eat my chicken breadless with salad on the side. Snore. But occasionally I made chook sandwiches as an afternoon nibble for guests and furtively scoff a few myself. Mmmmm.

RECIPE: BEST-EVER CHICKEN SANDWICHES

1 cup finely chopped chicken

1 finely chopped trimmed celery stalk

2 tablespoons coarsely chopped toasted slivered almonds

1/4 cup sour cream

1/4 cup garlic aioli or egg mayonnaise

1 tablespoon lemon juice

8 slices white bread, crusts removed

METHOD: Mix sour cream, aioli and lemon juice in a bowl. Stir in chicken, almonds and celery. Spread mixture over four slices of white bread. Cut into small square or ribbons. Serve.
