Low-carb dinners: grilled salmon with roasted capsicum salad (and starving child stars)

I thought it was about time I started blogging a few more low-carb dinners … and eating them too!

Here’s what we ate in the Household last night. Lovely, fresh, light, clean flavours.
Yum.

Recipe: Grilled salmon with roasted capsicum salad

3 red capsicums

2 tablespoons chilli-infused olive oil

1 red onion, peeled, halved and sliced

2 garlic cloves, chopped

20 pitted olives, halved

1 tablespoon red wine vinegar

1 tablespoon fresh mint, chopped

1 teaspoon fresh parsley, chopped

4 salmon fillets

rocket leaves

METHOD: Preheat oven to 180c. Place whole capsicums on a tray and roast until skin has blackened. Place each capsicum in a ziplock bag until cools. Remove and peel skin off. Chop roughly. Heat olive oil in a frying pan. Gently saute onion and garlic until soft. Toss onion mixture, capsicum, red wine vinegar and herbs gently to combine. Heat 1 tablespoon of olive oil in a heavy based pan and cook salmon fillets as liked. Serve salmon on a bed of capsicum salad with rocket leaves as garnish.

I promise you won’t leave the table hungry, unlike poor Modern Family star Ariel Winter, who is battling her mother in court. Ariel’s lawyer has alleged that people on the set of Modern Family were “having to sneak this child food because the mother deprives the child of food.”
