Sausages with cauliflower cheese mash

Ultimate comfort food, what more can I say?

Sausages with cauliflower cheese mash

INGREDIENTS: 5 medium potatoes, peeled and cubed; half a cauliflower, cut into florets; 100ml long-life cream (I prefer mine lactose free); 1 cup grated cheddar cheese; knob of butter; sea salt and freshly ground pepper; olive oil; 2 red onions; sliced; few sprigs rosemary; 1 tablespoon cornflour; 1 tsp mustard powder; 200ml water; 1/4 cup balsamic vinegar; 8 thick sausages (I like the organic lamb ones from Woolies).

METHOD: Put potatoes into a saucepan, cover with water and bring to boil. Add cauliflower and simmer for 10-15 minutes until soft. Drain, mash with cream, butter, cheese, salt and pepper. Cover to keep warm. Preheat grill. Pour olive oil into a frying pan and saute onions and rosemary over a low heat until soft. Stir in flour, water, mustard powder and vinegar and bring to boil. Simmer gently for 10-15 minutes. Add more water if mixture gets too thick. Grill sausages. Serve with mash, gravy and steamed veg.
