Waldorf Salad ain’t bad

Waldorf Salad has always sounded a bit yerk to me: apple, celery, walnuts and mayonnaise mixed together. Just. Not. Right. But I had some excess celery, apples and walnuts in the fridge prior to my Newcastle visit so I gave it a whirl. Mum was promising to have a barbecued chicken and bread rolls waiting on our arrival and I thought I’d take an edible gift to accompany lunch.

And, bugger me if Waldorf Salad isn’t fabulous. I’m a total convert. It’s a cinch to make, too. Here’s how:

EASY WALDORF SALAD

4 apples, peeled, cored and diced

3 sticks celery, diced

3/4 cup of crumbled walnuts

1/2 cup good mayonnaise

Salt and pepper to taste

METHOD: Combine everything. Serve. Fantastic with barbecued chicken.
