About-last-night

In my early 20s, About Last Night was my favourite movie EVER. Better than Can’t Stop The Music and The Breakfast Club combined.

I still love it, although even after watching it 500 million times. And I still can’t work out what Demi Moore says she’s put in the dressing for Rob Lowe’s salad on New Year’s Eve … anyone?

Making this recipe made me think about Jim Belushi’s line in the movie, “And she baked us a pie!” (Said with heavy irony as he HATED the woman who did the baking, but secretly wanted to shag her … isn’t that always the way?) Or maybe it was Rob? She wasn’t popular with either of them. Acid tongue.

Anyway, I made this pie for my parents when they came to dinner the other night. I wanted something completely low fuss and it fitted the bill perfectly. Using a frozen pie base makes this recipe soooooo easy.

Recipe: Pear & Hazelnut Tart

  • 2 pears, peeled, cored and thinly sliced
  • 1 x 220g frozen sweet pie base
  • 1/2 cup sour cream
  • 1/2 cup brown sugar
  • 2 eggs, beaten
  • 1 cup ground hazelnuts

Preheat oven to 200C (180C fan-forced). Line pie base with pear slices. Mix together sour cream, sugar, eggs and hazelnuts. Pour over pears. Bake in oven for around 45 minutes until pie is firm and golden. Serve warm with double cream.

It was always St Elmo’s Fire for me, but you’ve given me a good excuse to revisit About Last Night now. The tart looks lovely too.
