3 easy gluten-free desserts

My sister-in-law and nieces were diagnosed as coeliacs recently and my foodie mind has been working overtime on gluten-free recipes ever since. This week over at Village Voices I’ve blogged three gluten-free desserts that feature ingredients you’d normally find in the pantry – perfect if someone gluten-intolerant or coeliac is coming to dinner. And delicious in their own right if you want to give your family a sweet treat.

This week, Husband and the Sprogs are licking their lips through a bowl of Apple Snow in the fridge. Here’s the recipe:

RECIPE: APPLE SNOW

  •  6 medium red apples, peeled, cored and chopped
  • 1/3 cup caster sugar + ¼ cup
  • 1 lemon, grated rind and juice
  • 2 egg whites
  • ½ cup of single cream

Put the apples into a non-stick pan with 1/3 cup of the sugar, add the lemon rind and juice, cover and simmer for 20 minutes, stirring occasionally, until the apples are soft. Pour into a blender and whizz until smooth. Whisk the egg whites with electric beaters until soft peaks form. Whisk cream with ¼ cup of the sugar until thick and fairly stiff. Carefully fold the cream and egg whites into the cooled apple mixture. Spoon into individual dishes – not too much, it’s super-sweet! -  and chill in the fridge for a couple of hours. Make the dish really decadent by serving it with gluten-free shortbread fingers

    Hi alanah they sound delish. Could I also recommend my mate Lee Holmes’ website and cookbook Supercharged Food http://www.superchargedfood.com. It’s packed full of gluten free stuff that lee has developed herself after being diagnosed with an auto-immune disease. It’s v. Good and made with love.
